Who I Am and Why Did I Chose the Title "Actually" Low-Carb
"I've been doing a low-carb diet for a month and haven't lost any weight," she said, as she stuffed fruit into her mouth, accompanied by a whole grain muffin.

*massive eye roll*

I have seen this too often. People fail to look at the macronutrients of foods when they're on a "strict" diet. There are foods that are good for you that you temporarily have to cut out of your diet so that you can reach your goal weight/healthiness.

The diet industry is full of crap. Most cleanses and fasts make you lose water weight that you will gain back immediately. Most recipes titled "No Guilt" are actually huuuugely guilt-filled. I just recently saw Food Network post a "No Guilt" carrot cake muffin recipe. Their idea of making it healthy was replacing half of the flour with whole what flour...LOL (I may have majorly trolled that Instagram post...). The biggest piece of advice I can give you is to look at the nutritional labels on every single thing you put in your mouth. If there is no label, do a quick google search. It's so easy!

The biggest lie of the diet industry is that everybody needs carbs in order to exercise (notice that I stressed everybody. This may be true of some people, but it is NOT AT ALL true for everyone!! Don't send me hate mail if you are in the percentage of people who need a carb fix before a workout! I know you exist!). This is an excuse for companies to sell dieting hopefuls sugar-filled shakes and bars that contain more sugar (carbs!!!!!) than protein. Ok, maybe you'll get a nice little sugar rush for your workout, but guess what: I don't have ANY sugar before my workouts and I feel great before, during, and after. So if I can burn 800-1250 calories a day 5-6 times a week (das rite. I work out.) on a high-protein, high-fiber diet, it'd be nice for people to stop trying to sell me their shakes. Maybe that works for you...but it definitely makes things worse for me. Besides, if you look at the labels of all the shakes in any grocery store, you can easily find one that has less sugar and more protein.

If these protein shakes and bars haven't worked for you, I would highly suggest low-carb!

I used to be huge...

Those pictures, believe it or not, were 75 pounds ago. Now I look like this...

I still have a while to go until my goal weight, but for the first time in my adult life, I'm truly healthy.

How did I do it?
I tried pretty much everything. Calorie counting, HCG drops, eating what I wanted and exercising more than that amount of calories off, every frickin' cleanse known to man. Nothing worked for me! Any time a diet did work, it was temporary, and the weight came back within the month (sometimes within the week). Others can do these diets and easily lose weight, but my metabolism would not allow it. Blessing and a curse. Due to my picky body, I have to force myself to eat well 99% of the time. Yes, I'm occasionally jealous of my friends who eat pizza daily and complain that they can't gain weight, but at least I know that I'm filling my body with more nutritious foods.

"But there's so much FAT in some of the recipes you've posted!"
I must confess...I don't eat these foods every day. I've met with nutritionists and many a doctor (please do not send me messages about how I'm not eating enough...I think my doctors know better than your fitness magazines) to come to the conclusion that my body hates carbs and kinda hates fat. Most days, I stick to 15-20 net grams of carbs and eat lower-fat proteins like chicken breast and loads of egg whites. I get the majority of my carbohydrates from vegetables in the 2 salads I eat (with lunch and dinner) and the occasional fruit. The majority of these recipes are actually for my treat days! My metabolism sucks, and one actual cheat day can lead to gaining back every pound I've lost in the past 2 weeks. The solution? These low-carb versions of foods that used to be my go-to cheat foods. Some people (mostly men...ugh, I would kill for a male's metabolic rate) can actually lose weight eating all of these daily, but I'm not going to lie, I don't do that! These recipes are good for anyone doing the ketogenic diet!

Low-carb was the first diet I've had that is easy to maintain during which weight actually stayed off. Once I've reached my goal weight, I will slowly reintroduce larger portions of healthy foods that previously prevented me from losing weight (nuts, fruits, higher-carb vegetables). This is the first time in my life that I haven't yo-yoed with my weight. In the last 2 months, I have had ONE day during which I ate something that wasn't low-carb (Why are curly fries so damn delicious? We can put an ear on a mouse, but scientists haven't figured out how to genetically modify potatoes to make them low-carb?!?!). I have otherwise been fully satisfied by these recipes I've posted!

One more thing...you HAVE to exercise. I don't care how good you look in a bikini if you can't climb a set of stairs without getting winded. I don't care if you have fat rolls if you regularly exercise and watch what you eat the majority of the time. Sometimes, your body just has extra fat. That's nothing to freak out about, as long as you're being healthy! I got to this weight by exercising and dieting consistently. No, you don't have to be as intense as I have been. Just get up and get moving a little, that's all that matters!
