Here is an easy way to use any leftover rotisserie chicken you may have! This is a fairly simple recipe, using dressing made from scratch rather than the sugar-filled store bought dressing.
Ingredients: 50 g romaine lettuce, chopped 35 g purple cabbage, shredded 20 g carrots, shredded 60 g rotisserie chicken (I used the chicken breast) Dressing: 1 tbsp sesame oil 1 tbsp soy sauce (I used Bragg's Liquid Amino) 1 tbsp apple cider vinegar 3/4 tsp almond butter 1/4 tsp erythritol (can use Splenda or Stevia if that's what you have) Optional: 1/2 tsp sesame seeds Add together all of the salad ingredients. Whip together the dressing ingredients until blended and pour onto the salad. If you'd like, you can sprinkle some sesame seeds on top!
