If you live in Los Angeles, you have probably heard of Porto's. I can't remember a time before my low-carb lifestyle during which I would've said no to one of those delicious, crispy chicken croquettes (not to mention their cream cheese rolls!).
One day, I had leftovers from a rotisserie chicken who's wings and legs I had devoured. I decided to try to make my own croquettes from the leftover chicken! Ingredients: 2 cups cooked chicken (ground up from food processor) 3 tbsp mayonnaise 2 tbsp mustard Salt and Pepper to taste 1 cup mozzarella cheese 2 egg whites Unsweetened almond milk (Almond Breeze = 0 net carbs) Flaxseed meal Pork rinds (ground up) Oil for frying Combine the chicken, mayo, mustard, seasoning, cheese, and 1 egg white in a bowl. Form into small balls and coat with flaxseed meal. Combine the remaining egg white and the almond milk. Dip coated balls into egg mixture then into the ground pork rinds. Repeat this last step to double coat. Drop into the oil for frying. Remove when crispy and darkened and drain on a paper towel. Enjoy!

I'm not quite sure how much the entire recipe weighs. It was an earlier one, so I didn't weigh the whole amount!
