I needed "bread" for my ice cream sandwiches (pictured below) after creating batch after batch of chocolate and maple pecan ice cream!
1.25 cups butter, softened
2 cups erythritol
2 tsp vanilla extract
2 cups coconut flour
3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/8 tsp salt
1/2 tsp xantham gum
2/4 cup pecans, chopped (optional, but I included them!)
Preheat oven to 350 F. Cream together the butter and the erythritol. Beat in the eggs and vanilla. In a separate bowl, mix the coconut flour, cocoa powder, baking soda, and salt. Add to the butter mixture. Add xantham gum and pecans and mix until the dough comes together. Put as droplets on a cookie sheet and bake for 8-10 minutes. Let cool and enjoy!
This creates about 4 dozen cookies with the following nutritional information:
6.9 g fat
3.7 g carbs
2.3 g fiber
1.4 g net carbs
1 g protein
