I love Nutella. Growing up, there was only one day when my mother bought the creamy delicious chocolaty spread. I later found out that it was packed with sugar. 21g net carbs in each 2 tbp serving! So I decided to create my own. I decided to use pecans, because they are one of the lower-carb nuts (all nuts are fairly high in carbohydrates, sadly!). This recipe yields just over 6 servings of 2 tbs, with 2.5g net carbs per serving:
Ingredients: 1 cup pecans (or whatever nuts you want!) 1 tsp vanilla 4 tbsp cocoa 1/4 cup almond milk (can add more if you want a more milk-chocolate taste!) 1/4 cup coconut oil 2-4 tbs sugar substitute (I used a combination of erythritol and liquid Stevia) depending on your preference of sweetness Directions: Put the nuts in a food processor with a splash of the almond milk. Process them until they come to a smooth buttery texture (this might take a while depending on your food processor!). Add the remaining ingredients and blend until smooth. Enjoy!! Refrigerate when storing.
