I won't lie, I didn't even know what a sopapilla was until I watched the "Casa Bonita" episode of South Park and looked it up. I tried several batches of this, and had the most success once I added extra baking powder (which helped it actually puff up) and xanthan gum (which kept it together during frying). I also used cinnamon and erythritol to coat it instead of honey!
Ingredients: 1 cup coconut flour 1 cup flaxseed meal 3.5 tsp baking powder (I recommend Trader Joe's brand) 1 tsp salt 2 tbsp erythritol 3.5 tsp xantham gum 2 tbsp coconut oil 2/3 cup water Oil for frying Cinnamon and Erythritol for coating Directions: Mix together everything but the water, frying oil, and cinnamon/erythritol coating mixture. Slowly add the water, mixing as you go, until you get a firm dough. Roll out and cut into triangles. Fry. While still warm, dip in the cinnamon and erythritol coating. Enjoy!! Makes about 12 servings: 103 calories 6.7g fat 8g carbs 6g fiber 2g net carbs 2.7g protein
