Low-Carb Thyme Bread (approx. 2g net carbs)

I. LOVE. BREAD. Seriously, Oprah's got nothing on me. My sister got me hooked on a couple of paleo bread recipes, but I just had to make my own including pea protein, my absolute favorite low-carb trick food. This recipe makes 6-8 servings with about 2G net carbs per serving

Ingredients:
1 cup almond flour
1/4 cup flaxseed meal
1/4 cup pea protein
1/8 cup of herbs of choice (I used thyme)
1.25 tsp salt
1.5 tsp baking soda
1/4 cup oil (I used white truffle olive oil...YUM!)
2 whole eggs and 4 egg whites

Directions:
Mix together all the dry ingredients and the herbs. Beat the eggs and add to dry ingredients and oil. Add water until you get your desired consistency. Pour batter into prepared pan. I used my Le Creuset broiler (pictured above). Bake at 350 F for 25-30 minutes. Enjoy with some butter or use for a sandwich!
